Bindi Masala (Ladies Fingers or Okra)

Bhindi Masala


  • 10 Okra / Bhindi / Ladies Finger (chopped)
  • 1/2 teaspoon Cumin / Jeera
  • 1 Onion (thinly sliced)
  • Pinch of Hing / Asafoetida
  • 1 teaspoon Ginger Garlic Paste
  • 1 Green chilli (slit)
  • 2 Small Tomato (finely chopped)
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Kashmiri Red Chilli Powder / Lal Mirch Powder
  • Salt (to taste)
  • 1/2 teaspoon Coriander Powder
  • 1/2 teaspoon Aamchur Powder / Dry Mango Powder
  • 1 teaspoon Kasuri Methi / Dry Fenugreek Leaves
  • 1/4 teaspoon Cumin Powder / Jeera Powder
  • 1/2 teaspoon Garam Masala Powder
  • Coriander leaves


  1. Heat  in a large kadai some oil.
  2. Add chopped okra. Coat well with oil and spread the bhindi.
  3. Stir occasionally, making sure the bhindi gets cooked well from all the sides.
  4. Also fry till the bhindi turn slight golden brown. Transfer to a plate and keep aside.
  5. Saute cumin and hing till they turn aromatic. Additionally add onion and continue to saute.
  6. Add ginger-garlic paste and green chilli. Saute well. Add tomato and saute till they turn soft and mushy.
  7. Now add all spices and salt to taste. Cook on low flame till the spices gets cooked well.
  8. Add in fried okra and mix gently. Cover and simmer for 3 minutes. Add in garam masala powder and crushed kasuri methi.
  9. Finally, serve bhindi fry recipe or bhindi ki sabzi garnished with few coriander leaves.
