Ingredients
- 10 Okra / Bhindi / Ladies Finger (chopped)
- 1/2 teaspoon Cumin / Jeera
- 1 Onion (thinly sliced)
- Pinch of Hing / Asafoetida
- 1 teaspoon Ginger Garlic Paste
- 1 Green chilli (slit)
- 2 Small Tomato (finely chopped)
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Kashmiri Red Chilli Powder / Lal Mirch Powder
- Salt (to taste)
- 1/2 teaspoon Coriander Powder
- 1/2 teaspoon Aamchur Powder / Dry Mango Powder
- 1 teaspoon Kasuri Methi / Dry Fenugreek Leaves
- 1/4 teaspoon Cumin Powder / Jeera Powder
- 1/2 teaspoon Garam Masala Powder
- Coriander leaves
Instructions
- Heat in a large kadai some oil.
- Add chopped okra. Coat well with oil and spread the bhindi.
- Stir occasionally, making sure the bhindi gets cooked well from all the sides.
- Also fry till the bhindi turn slight golden brown. Transfer to a plate and keep aside.
- Saute cumin and hing till they turn aromatic. Additionally add onion and continue to saute.
- Add ginger-garlic paste and green chilli. Saute well. Add tomato and saute till they turn soft and mushy.
- Now add all spices and salt to taste. Cook on low flame till the spices gets cooked well.
- Add in fried okra and mix gently. Cover and simmer for 3 minutes. Add in garam masala powder and crushed kasuri methi.
- Finally, serve bhindi fry recipe or bhindi ki sabzi garnished with few coriander leaves.
