Mixed Vegetable Sabzi


  • 2 Medium Size Carrots (diced cubes)
  • 2 Small Potatoes (diced bite size)
  • 1 Cup Peas
  • 1/2 Cup Corn
  • 1/4 Cup French Beans (String Beans)
  • 1 Medium Onion (chopped finely)
  • 3 Pips Garlic (chopped finely)
  • 1/2 Inch Ginger (julliened)
  • 2 Green chillies (chopped finely)
  • 1 Medium Tomato (cut into 4 pieces)
  • Pinch of cumin seeds
  • 1 teaspoon Curry Powder
  • 1/2 teaspoon Garam Masala
  • 1/2 teaspoon Coriander Powder
  • 2 Stalks Coriander (finely chopped)
  • Water
  • Oil
  • Salt (to taste)


  1. Heat oil in a kwali and add in the cumin seeds. When its crackling add in the onions, garlic, ginger, chillies, tomato and coriander leaves and saute for  10 minutes on low heat.
  2. Once its cooked, add in the carrots and potatoes and french beans first. Stir continuously for 10 minutes until potatoes are a bit tender and soft. Add in the peas and corn.
  3. Mix thoroughly and add in the 3 powder spices and some water. On low heat, cook the ingredients. Cover the kwali. If necessary add some water.
  4. Serve it with hot with rice, daals. Rotis are also good with this sabzi and yogurt.
