Ingredients
- 1 KG Mutton (cut into bite size)
- 15 Shallots (cut lengthwise)
- 5 Pips Garlic (to grind)
- 1 Inch Ginger (to grind)
- 1 Large Tomato (cut into 4 pieces)
- Coriander leaves
- Curry Leaves
- 6 teaspoon Curry Powder
- 5 Dried Red Chillies (paste)
- 4 Fresh red chillies (paste)
- 2 teaspoon Cumin Powder (grinded)
- 5 Medium Potatoes (cut into bite size)
- Oil
- Salt (to taste)
- Black pepper (a pinch)
Instructions
- Wash mutton under running cold water.
- Pat dry with paper towel and set aside.
- In a medium size pan,heat some oil, fry the curry leaves, shallots till fragrant.
- Add in the grinded garlic and ginger and stir for 15 minutes adding in the curry and cumin powder. Add water to the cooking and keep on low heat.
- Add in the chilly paste and tomatoes, cook till you notice the oil has risen.
- Add water & put in the mutton pieces, making sure there is enough liquid to cook the dish.
- Usually the mutton cooks in the pot for 45 mins as we do not use pressure cooker.
- Within that time given, just check if the mutton is slightly cooked before adding the potatoes.
- When ready serve with rotis or biryani rice, yogurt, pappadom or raita.
