Pumpkin Masala Sabji


  • 2 Cups Small Unripe Pumpkin (peeled & cubed)
  • Pinch of cumin seeds
  • 2 Medium Onions (chopped)
  • 1 teaspoon Ginger (crushed)
  • 1 teaspoon Garlic (crushed)
  • 1 Green Chili (chopped)
  • 1 Large Tomato (chopped)
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Ground Cumin
  • 2 teaspoon Garam Masala
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red Chili Powder (Cayenne)
  • Coriander leaves (to garnish)
  • Salt (to taste)
  • Oil
  • Water


  1. In a pan heat oil and add the cumin seeds till crackle and add the onions.
  2. Saute until slightly golden and add the ginger and garlic.
  3. Add the spices and saute on low heat for about 2 minutes stirring constantly. Add the green chili and tomatoes, continue to cook on medium heat, until the oil begins to separate from the sides (about 8 minutes)
  4. Add the pumpkin pieces. Stir and mix well. Add salt and water. Mix well, cover and cook on medium until fully cooked (about 10-15 minutes).
  5. Add the chopped coriander leaves. Serve hot with rotis.
