Sodhi (Vegetable Dish)

  • 3 Stalks Bak Choy (chinese veg) (cut into large pieces)
  • 3 Medium Potatoes (cut into bite sizes)
  • 2 Medium Onions (chopped)
  • 4 Pips Garlic
  • 1 Inch Langkuas (Blue Ginger) (cut into small pieces for blender)
  • 2 Stalks Serai (lemon grass) (Use the bottom parts, cut them into small pieces for blender)
  • 2 Blue Eyed Chillies (Red)
  • 1 Packet Coconut Cream
  • 3 Big Lemons (juiced)
  • Salt (to taste)
  • Oil


  1. Grind the onions, garlic, langkuas, serai, and chillies into a thick paste.
  2. Heat up a medium sized pot and add oil.
  3. Fry the grinded ingredients till fragrant around 15 minutes, stirring continuously. Cover for 5 minutes.
  4. Add in diced potatoes and some water so that the potatoes are halfway cooked.
  5. Add in the lemon juice and salt. Add in the leafy Bak Choy and some water to cook them.Sodhi-1
  6. After 10 minutes add in the coconut cream. Turn to low heat till the vegetables are cooked.
  7. At no time, do not boil the dish as the coconut cream will tend to turn curdle.
  8. Serve with white rice, fried salted fish and lemon pickle/pappadam.
